Father's day dinner Cajun style

This is a pot of Crawfish etouffee I cooked for my family on Father's Day.

Etouffee means smothered and let me tell you these guys are smothered.

In the pot is:
3 sticks of butter
2 pounds of chopped onions
3 cans of Rotel tomatoes
4 pounds of Crawfish tails
and assorted other ingredients and seasonings.

You can almost hear your arteries clogging as you eat this stuff but it's worth it!

    Kevin, At first, I thought this was shrimp creole, but regardless, I am missing Louisiana. I am smellin what your cookin, and you cooked on Father's Day? What a DAD! Now, cha, I can whip up a good roux, you know!
