Baby Lamb Chops
Ingredients
12 pieces of baby lamb chops
4 large garlic cloves, peeled
1 1/2 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh thyme
1 1/2 teaspoons salt
1 1/2 teaspoons coarsely ground black pepper
1 bunch of asparagus
6 small red potatoes
1 small package of cherry tomatoes
1 bag of fresh spinach
Preparation
Preheat oven to 350°F.
Season lamb chops with garlic, olive oil, thyme, salt and black pepper
Cook for 30 minutes on each side.
Sides
Steam asparagus till soft.
Season potatoes with black pepper and garlic and cooked over a skillet with a little olive oil. Cook till tender and brown.
Salad
Chop tomatoes in half and combine with spinach. Drizzle a little oil and vinegar on top.
