Black & White Espada

A deep sea fish caught off the coast of Madeira. It lives so deep, when it arrives at the surface in the nets it is dead from the huge change in pressure. (I won't go into into further detail). It is delicious, however, pan-fried, accompanied by a crisp Sauvignon Blanc on a Summer's evening.
