Fiesta Time
Mikeys' Mexican Chicken Casserole
Try it, you'll like it! LOL! :)
2 boneless chicken breast
1 can cream chicken soup
1 can cream of poblano soup
1 can rotel
4oz. of black olives (optional)
1t garlic chili seasoning
bag of Tostitos
16oz. Mexican cheese blend
Pressure cook chicken until tender. Shred and mix with can soups, olives, rotel, and garlic chili seasoning. Heat can ingredients and chicken for 5-7mins. In a 13x9 baking dish, spread a small layer of soup mixture to slightly coat bottom. Then cover botom with a layer of chips, top with soup mixture, then a layer of shredded cheese. Repeat step one more time. Top layer should be chips covered with cheese. Bake at 350 for 25-30mins or until cheese is golden brown. Serve with your favorite Mexican side dishes. For a milder version, omit garlic chili seasoning.

Uhmmmmm, I doubt that my rendition will look anything as tasty as yours, but I'm gonna try it tonight!! The directions don't seem to difficult to follow (thank God)....you also photographed this dish just beautifully!!
