I've always wondered if there was a optical benefit to pancakes, or if they were simply space savers?

I don't think there is an inherent design benefit to small lenses. It's more like the other way around, where space saving, discreteness, portability are benefits of the pancake.
That being said, this just so happenes to also be optically very sharp! Best of both worlds :)
